4 Large Eggs - room temperature
1 Cup All Purpose Flour (4 ounces)
1 Cup Milk (8 ounces)
Pinch of Salt
1 Tbsp Melted Butter (Plus Extra melted butter for each crepe when cooking)

To prepare batter either place all the above ingredients in a Blender and blend until smooth or whisk together in a medium mixing bowl eggs, milk & butter until well blended. In a separate large mixing bowl whisk together flour & salt until well blended. Pour egg mixture into flour mixture and whisk to form a smooth batter with no lumps. Set batter aside for 30 minutes, of if using batter the next day, cover 7 refrigerate.

To cook crepes heat a good non stick pan - 8 " over medium high heat. Brush bottom of pan with a thin layer of melted butter. Using a ladle pour just enough batter to cover the bottom of the pan, tipping it to coat evenly. Place pan on the heat and cook until the batter is set, about 2 minutes. Flip the crepe with tongs or a spatula and cook another 1 minute. If pan begins to smoke, remove from heat briefly and reduce heat. Transfer cooked crepe to a plate and continue with the rest of the batter, brushing the pan with more butter as needed and stacking finished crepes on top of each other.

Fill with mixture you desire & served immediately, or cooled, wrapped in plastic and refrigerated or frozen - so you can make ahead.

Blintz are normally filled with a cream cheese fruit mixture using crepes, or you can fill with Nutella & Banana & Sprinkle Powdered Sugar, or Cocoa Powder or drizzle with Chocolate Sauce depending on your favorite flavor.
You can also have savory crepes, with smoked salmon, cheese, ham, turkey, etc.


French Toast

Challah Bread cut 1 " (inch) Thick

Vanilla Egg Creme
2 Large Eggs
2/3 Cups Milk
2 TBSP Granulated Sugar
1 Tsp Ground Cinnamon
1 Tsp Vanilla Extract
(You can also have Orange Rind too)
2 TBSP Butter or Vegetable Oil (I like Rice Bran Oil or Olive Oil if Oil is preferred)
Confectioners Sugar
Maple Syrup or Berry Syrup

In a medium bowl, whist together eggs, milk, sugar, cinnamon & vanilla. Soak Bread thoroughly in Egg Mixture. In a large skillet, milk half the butter of medium heat. Cook soaked break, two pieces at a time, for 3 - 4 minutes per side or until crisp and browned, milting the remaining butter before the second batch. Dust with confectioners sugar and serve with maple syrup
You can use Challah Bread or Raisin Challah Bread - or if you prefer French Bread that is fine too.

Raspberry Vinaigrette Suitable for any Spinach or Mixed Green Salad with Berries

1/4 cup Red Wine Vinegar
1/4 Cup Balsamic Vinegar
a2 Tsp Sugar or Agave
1 Tbsp Dijon Mustard
