Eat at State's ON-THE-GO Food Truck Wins Gold Award for Original Recipe
EAST LANSING, Mich. — The Eat at State ON-THE-GO food truck has been awarded gold – top honors – in the 2013 Nutrition Awards Best Local Foods Recipe category by the National Association of College & University Food Services (NACUFS) for MSU’s own Smoked Cheddar Cheeseburger.
The award, which is given out in odd-numbered years, recognizes universities that use locally produced foods and ingredients in university menus.
“To win a Nutrition Award is a great honor in collegiate dining,” said NACUFS nutrition award chair Robin Allen, administrative dietitian with University of Illinois at Urbana-Champaign. “So many colleges and universities are doing everything they can to make their dining programs more nutritional and beneficial for the students and it’s excellent for an institution to be recognized for its efforts.”
MSU’s own Smoked Cheddar Cheeseburger was developed to be a signature item when the Eat at State ON-THE-GO food truck launched in fall 2012.
“We wanted it to feature as many local ingredients as possible,” said Culinary Services corporate chef Kurt Kwiatkowsi. “Most ingredients are grown right here on MSU’s campus.”
The cheeseburger features MSU Beef grown on campus, harvested at Ebels Meat Processing in Falmouth, Mich. and processed at Byron Center Meats in Byron Center, Mich. The food truck also uses two MSU Dairy Store cheeses, MSU Smoked Cheddar and MSU Sharp Cheddar – made from milk produced both at MSU as well as a few local dairy farms – and MSU Student Organic Farm field greens, red onions and roma tomatoes for toppings. Culinary Services also partnered with Breadsmith of Okemos, Mich. to produce the buns for the food truck’s burger.
“We were able to develop this burger because of our current relationships with all of the producers,” said chef Kurt. “The vendors were excited to work with us on this project – they tasted the final product and all felt it was one of the best burgers they have ever eaten.”
“The response from our guests has been positive,” chef Kurt added. “This is the top selling food truck item, and our guests’ favorite.”
